Time for Summer “Grilling!”

by Mark Bergasse, President & Founder on May 20, 2013

image bbqing Time for Summer Grilling! In the month of May we take a break away from automotive writing and focus on what’s more important at this time of the year. That is BBQ’ing, or to some people, “Grilling!”

We have attached a simple but great Rib Recipe and I hope you all have some family time over the summer weekends to sit around the back yard with a drink and some great food.

Cheers, Mark

Recipe – RIBS

Ingredients:

image recipeRIBS Time for Summer Grilling!1 tablespoon ground cumin
1 tablespoon onion power

1 tablespoon garlic powder

1 tablespoon chili powder

1 tablespoon paprika

Lightly salt and pepper to taste

3 pounds baby back pork ribs

1 cup barbeque sauce / or like we do – Slobber it on…Mmmmm
(Our Favourite is BULLS EYE – Honey Garlic for Ribs and Original for Wings)

Directions:

  1. Preheat a gas grill for high heat, or arrange charcoal briquettes on one side of the barbeque. Lightly oil the grate.
  2. In a small jar, combine cumin, chili powder, paprika, salt, and pepper. Close the lid, and shake to mix.
  3. Trim the membrane sheath from the back of each rack. Run a small, sharp knife between the membrane and each rib, and snip off the membrane as much as possible. Sometimes small needle nose pliers will help grab the membrane to remove it. Sprinkle as much of the rub onto both sides of the ribs as desired. To prevent the ribs from becoming too dark and spicy, do not thoroughly rub the spices into the ribs. Store the unused portion of the spice mix for future use.
  4. Place aluminum foil on lower rack to capture drippings and prevent flare-ups. Lay the ribs on the top rack of the grill (away from the coals, if you’re using briquettes). Reduce gas heat to low, close lid, and leave undisturbed for 1 hour. Do not lift the lid at all. (REMEMBER! Slow & Low)
  5. Brush ribs with barbecue sauce, and grill an additional 5 minutes. Serve ribs as whole rack, or cut between each rib bone and pile individually on a platter.

Enjoy!

Candis is moving West

by Mark Bergasse, President & Founder on March 11, 2010

Well for all of you that know Candis Deacon, she has been with us for almost 3 years,  but the time has come for her to move to Alberta to be with her beau Jeff, and the long distance relationship will become a close one.  We are going to miss the ladies touch she has brought to the shop, and “her boys” as she calls us will dearly miss her too!  She is staying on until the end of March to help train “the New Guy” Michael Peter who has a big set of shoes to fill,  Michael brings a extensive Automotive background that started in Austria over 30 years ago. Candis wanted me to say a hello and thank you to all the friends she made here at ”Mark’s Auto Service”.

Good Luck Candis

Cheers Mark

We hosted a Worst Roads and Winter driving clinic at our shop on Saturday October 17th it was sponsored by CAA, It was a huge success thanks to my dedicated staff who came in on there day off to help.

There was a power point presentation on winter driving tips, what bad roads can do to the car, followed by 3 mini workshops at different hoists in the shop, this is were they really got to get our hands dirty seeing different areas on vehicles taken apart  for demonstration,

Adrian Wong explained winterizing your car and testing fluid samples for wear, Shawn Edwards explained Steering and Brakes and Steve Handojo performed a Wheel Alignment and Tire demonstration.

Thank you Iain, Candis, Shawn, Steve and Adrian
